Folks, found this recipe from Mrs. Helen LeVien, an Adirondacker, who lived her life in the Adirondack Park in Elizabethtown, NY - Essex County Government seat. Looks delicious and I'm going to try tonight:
Supreme Potato-Onion Bake
8 med. potatoes, 2 lg. sweet onions, 1/2 c. water, 2 tb. chicken boullion granules, 2 c. shredded cheddar cheese, 2 c. sour cream, 3/4 c. bread crumbs, 2 tb. melted butter.
Cook potatoe, cool and slice to 1/4" thick. Set aside. Place onion, water and boullion in pan. Bring to boil. Summer 7 mins. or until tender. Drain, set aside. Combine cheese & sour cream in a 2.5 qt greased baking dish. Layer potatoes, onions and cheese several times. Combine crumbs and butter. Top the potatoe mixture. Sprinkle with paprika. Bake uncovered for 20 minutes in 350' oven.
